Hatzidakis Winery is a wine producer based on the island of Santorini, Greece. Founder Haridimos Hatzidakis planted the original half-hectare (1.2-acre) vineyard in 1996 with the indigenous grape variety Aidani, which he cultivated organically. The winery was constructed in 1997 in a small cave, in keeping with Santorinian tradition. The first bottles of its Santorini and Mavrotragano wines were released in 1999. The Hatzidakis vineyard has since grown to encompass ten hectares (25 acres) of land in the villages of Pyrgos Kallistis, Megalochori, Emporio and Akrotiri, throughout the island. All of these vineyards are farmed organically and range from 70 to 350m (230-1150ft) above sea level. The slopes are primarily planted with Assyrtico, Aidani and Mavrotragano. The estate further supplements its wine production with grapes sourced from other vineyards in Santorini. The Santorini terroir is characterized by volcanic soils, strong winds, limited rainfall and hot and dry summer months. The vines are grown in traditional basket shapes to shelter them from the island’s strong winds and produce low yields of grapes. Hatzidakis Winery vineyards are fertilized naturally with animal and plant manure. Hatzidakis makes a wide range of wine styles, from dry white and red wines to the traditional sweet Vinsanto and Voudomato wines.
